Crush it with these tender cupcakes


Ingredients

  1. 1/2 cup unsalted butter, room temperature
  2. 1-cup sugar
  3. 1-teaspoon fresh orange zest
  4. 1/8 teaspoon orange oil
  5. 2 eggs
  6. 2 cups cake flour
  7. 1/4 tsp. baking soda
  8. 1/4 teaspoon salt
  9. 3/4 cup orange soda
  10. Frosting: 1/2 cup unsalted butter
  11. 2 cups powdered sugar
  12. 1 teaspoon grated orange zest
  13. 2 drops orange oil
  14. pinch of salt
  15. 2-3 teaspoons fresh orange juice

Instructions

  1. Heat oven 350F. Line cupcake tin with paper liners.
  2. Cream butter, sugar, zest and orange oil with electric mixer until light and fluffy.
  3. Add eggs, one at a time beating until well incorporated.
  4. Whisk flour, baking soda and salt for 30 seconds. Gradually add in dry ingredients alternating with orange soda, scraping down sides of bowl as needed.
  5. Beat one minute until all is thoroughly mixed.
  6. Scoop batter into prepared liners filling ¾ full.
  7. Bake 20 to 22 minutes or until wooden pick inserted in center comes out clean.
  8. Cool and frost. 
  9. FROSTING: Beat all ingredients together adding just enough orange juice to make a fluffy frosting.
