Description

Fresh festive and flavorful make these pork sliders for rave reviews.


Ingredients

Scale

¾ cup Sam’s Fresh Salsa Mango Pineapple plus additional for serving

1 Southwest seasoned pork loin filet in a cooking bag, (I used Chipotle BBQ)

1 (12 oz.) package Hawaiian sweet rolls (12-count)

4 tablespoons melted butter

3 tablespoons grated cotija cheese

6 slices deli sliced provolone cheese

Fresh cilantro for garnish

 


Instructions

  1. Heat oven to 350F. Line a rimmed baking sheet with foil.
  2. Place salsa to one side of baking sheet. Following manufacturer’s instructions, place pork loin in its cooking bag on other side of baking sheet. Bake salsa and pork for 25 minutes. Remove from oven and let rest for 3 minutes.
  3. Meanwhile, with a serrated knife, slice rolls in half horizontally. Place rolls, cut-side-up, on a parchment lined baking sheet. Reserve 1 tablespoon of melted butter. Brush remaining butter over cut side of rolls. Sprinkle rolls with 2 tablespoons of cotija cheese. Toast rolls under the broiler for about 1 minute or until golden.
  4. Layer provolone cheese on top of bottom half of rolls.
  5. Remove pork from cooking bag and transfer to a cutting surface. Thinly slice half of the pork. (Wrap and reserve the other half for another meal). Layer the pork evenly on top of the cheese.
  6. Spoon the warm salsa evenly over the top.
  7. Cover with top half of rolls. Brush tops of rolls with remaining melted butter and sprinkle with remaining cotija cheese.
  8. Cover loosely with foil and bake 6 to 8 minutes or until warmed through. Slice into individual sliders. Sprinkle with cilantro. Serve with additional mango pineapple salsa.
