Description

Crispy and more lemony than the bakery version.


Ingredients

Scale

2-½ cups all-purpose flour

1-teaspoon baking powder

½ teaspoon fine sea salt

2 sticks unsalted butter, softened

1-cup sugar

2 egg yolks

Grated zest of 1 lemon

3 tablespoons fresh lemon juice

½ teaspoon lemon extract


Instructions

  1. Heat oven 350F.
  2. Combine flour, baking powder and salt; set aside.
  3. In large mixer bowl, cream butter and sugar until light and fluffy. Beat in egg yolks, lemon zest, juice and extract.
  4. Add dry ingredients; blend well.
  5. Drop cookie dough by tablespoonfuls onto ungreased cookie sheets.
  6. Bake 15 to 16 minutes or until edges are lightly brown.
  7. Transfer cookies to cooling rack.
