(21-25/pound) deveined shrimp with tails on, fresh or frozen

guacamole seasoning or other Mexican style seasoning blend
I use the Litehouse Guacamole Herb Blend

diced English cucumber

cup
diced tomatoes
½
teaspoon
kosher salt

diced red onion
rinsed in cold water

diced fennel

cup
diced sweet red bell pepper

avocado
seeded, peeled, diced

citrus juice
combination of lemon, lime and orange

agave

tablespoon
lemon olive oil

tablespoon
chopped fresh cilantro or dill
Instructions
Heat immersion circulator water bath to 130°F.
Place shrimp and seasoning in a vacuum seal bag keeping shrimp in a single layer. Seal bag.
Place shrimp in water bath and set time for 15 minutes if shrimp are fresh or 20 minutes if shrimp are still frozen.
When time is up transfer shrimp in bag to a 50/50 ice-water bath to cool for 10 minutes.
Meanwhile, prepare the diced vegetables and vinaigrette
In a bowl, toss the tomatoes and cucumbers with salt to help release some of their liquid. Set aside.
Place remaining vegetables and avocado in a serving bowl.
In a bowl, whisk juice, agave and olive oil until blended. Add two tablespoons to avocado mixture and toss to coat.
Once shrimp have cooled, remove tails and dice into bite-size pieces. Toss shrimp with remaining vinaigrette and let marinate for 15 minutes.
Add shrimp and marinade to the avocado mixture. Drain the tomatoes and cucumbers and add along with the shrimp. Toss well. Add herbs and toss again.
Serve with chips or crackers. Or spoon onto endive spears.
