Lay two strips of bacon down slightly overlapping on one end.
Thinly slice your peeled potato on a mandoline and toss with just enough oil to coat.
Season potatoes with salt, pepper and whatever floats your boat....garlic powder, smoked paprika, rosemary...it's all good.
Lay potatoes on top of the bacon, slightly overlapping each other, and aligning one edge of the potatoes with the edge of bacon.
Roll from 1 end towards the other and place each in a muffin tin cup.
Bake for 45 minutes. Cover the top loosely with foil to prevent over-browning and continue to bake another 15 minutes to insure fully cooked bacon on the inside.

Thinly sliced potatoes is a must for easy rolling.Thick sliced bacon works best.Use a neutral oil like grape seed or avocado which has a high smoke point.Choose any additional spices you like to season the potatoes.Grated cheese can be sprinkled on top during last 15 minutes of baking time.
