1poundboneless skinless chicken breastscut into bite-size pieces
¼cupbuttermilk
2tablespoonsMiller’s Banana Pepper SauceMild
2tablespoonsall-purpose flour
2tablespoonscanola oil
1tablespoonfreshly grated ginger
1large carrotjulienned
1small red bell pepperthinly sliced
½cupdiced onion
½cupfrozen green peas
For the orange sauce:
1large orangegrated zest and juice (6 tablespoons)
¼cuplow sodium soy sauce
¼cupMiller’s Banana Pepper SauceMild
Garnish:
2cupsHot cooked rice
2Sliced green onion
2tablespoonChopped cilantro
¼cupCrushed peanuts
Instructions
Place the raw diced chicken into a large bowl. Add buttermilk and pepper sauce and toss well. Let marinate at room temperature for 15 to 30 minutes. Using a slotted spoon (letting excess marinade drain off) transfer chicken to a plate and sprinkle with flour.
In a large frying pan, heat oil over medium heat. Add the diced chicken and cook until lightly golden on the edges and no longer pink, about 5 minutes. Push chicken to one side.
Add ginger, carrots, red bell peppers and onions to the pan. Cook, stirring, for 3 minutes or until vegetables are softened.
Meanwhile, in a bowl, whisk together the orange juice, zest, soy sauce and pepper sauce.
Add sauce and peas to pan, cook for 3 to 4 minutes, stirring to coat chicken and vegetables with sauce.
Serve warm over rice topped with sliced green onion, cilantro and peanuts.
