Healthy Orange Chicken

Healthy orange chicken stir-fry recipe.

This healthy orange chicken recipe is the perfect kid-pleasing weeknight dinner. The Asian inspired fruity-fresh orange flavor pairs perfectly with the mild sweet heat of Miller's Banana Pepper Sauce. This is my second entry in the Healthy/Entree category and so much better than the usual take-out.

I  am 1 of 30 bloggers invited to share innovative ideas in an exclusive recipe challenge hosted by Millerโ€™s Banana Pepper Sauce! Once I opened and tasted all 3 sauces my creative juices began to flow. These pepper sauces have the perfect balance of sweet, spicy and tangy rarely found in a pepper sauce. The bold flavors are delicious and healthy with heat levels that only enhance a dish.

How to make this recipe

Marinade mixture.

Start by marinating diced chicken breast in a mix of low-fat buttermilk and Miller's Pepper Sauce. I use the very kid-friendly mild version of the pepper sauce as my grandkids don't like anything too spicy. The marinating process is less than 30 minutes and infuses so much flavor and juicy tenderness in to the chicken.

Orange chicken stir-fry.

Next, drain excess marinade from the chicken and toss chicken with flour. Cook chicken in hot oil until no longer pink. Add ginger, carrots, red peppers and onions and cook just until softened. Meanwhile, mix fresh orange juice, zest, soy sauce and Miller's Banana Pepper sauce until blended. Add to the skillet, along with the peas, stirring up any browned bits and coating chicken and vegetables in the sauce. Serve with hot cooked rice and a sprinkle of green onions, cilantro and crushed peanuts.

Ingredients
  

  • 1 pound boneless skinless chicken breasts cut into bite-size pieces
  • ยผ cup buttermilk
  • 2 tablespoons Millerโ€™s Banana Pepper Sauce Mild
  • 2 tablespoons all-purpose flour
  • 2 tablespoons canola oil
  • 1 tablespoon freshly grated ginger
  • 1 large carrot julienned
  • 1 small red bell pepper thinly sliced
  • ยฝ cup diced onion
  • ยฝ cup frozen green peas

For the orange sauce:

  • 1 large orange grated zest and juice (6 tablespoons)
  • ยผ cup low sodium soy sauce
  • ยผ cup Millerโ€™s Banana Pepper Sauce Mild

Garnish:

  • 2 cups Hot cooked rice
  • 2 Sliced green onion
  • 2 tablespoon Chopped cilantro
  • ยผ cup Crushed peanuts

Instructions
 

  • Place the raw diced chicken into a large bowl. Add buttermilk and pepper sauce and toss well. Let marinate at room temperature for 15 to 30 minutes. Using a slotted spoon (letting excess marinade drain off) transfer chicken to a plate and sprinkle with flour.
  • In a large frying pan, heat oil over medium heat. Add the diced chicken and cook until lightly golden on the edges and no longer pink, about 5 minutes. Push chicken to one side.
  • Add ginger, carrots, red bell peppers and onions to the pan. Cook, stirring, for 3 minutes or until vegetables are softened.
  • Meanwhile, in a bowl, whisk together the orange juice, zest, soy sauce and pepper sauce.
  • Add sauce and peas to pan, cook for 3 to 4 minutes, stirring to coat chicken and vegetables with sauce.
  • Serve warm over rice topped with sliced green onion, cilantro and peanuts.

      Yes. Just a basic stir-fry technique. Use a well seasoned wok if you want to be more authentic.
