Instructions
Preheat your waffle iron according to manufacturer’s instructions.
In large bowl, whisk, flour, nuts, cornstarch, baking powder, salt and spice until blended.
In another bowl, combine pumpkin, egg yolks, milk, maple syrup, butter and vanilla; whisk until smooth.
Add wet ingredients to dry and whisk until well blended.
In a clean bowl, whisk 5 egg whites until stiff peaks form. Gently fold egg whites into the pumpkin batter.
Bake waffles.
Notes
If you don’t have pumpkin spice you can make your own by mixing 1 ¼ teaspoon cinnamon, ½ teaspoon ground ginger and ¼ teaspoon nutmeg.
