Upside-Down Peach Tart with a Pecan-Stuffed Crust

This stunning upside-down peach tart with a pecan stuffed crust and bourbon caramel takes summer baking to the next level. If you ever made the classic French peach tarte tatin then you will love this summer dessert recipe with a fun twist.

I made the cut for the Wick's Pies Recipe Challenge! I already made a birthday pie and a savory pot pie. Now, I'm baking my way into the dessert category with this incredible fresh peach tart with a pecan stuffed crust. Wick's Pies sent me their award-winning, #1-in-the-US, ready made pie dough circles to get this recipe rolling.

Ingredients for the Perfect Upside-Down Peach Tart

Making the Peach Bourbon Caramel Filling

Making bourbon caramel.
Mix brown, sugar, cinnamon, salt and bourbon over medium heat. Simmer for 5 minutes.

Stir in butter.

Arrange peaches in pan and dust with flour. Pour bourbon caramel over peaches.

How to Make the Pecan-Stuffed Crust

Pecan filling ingredients in a food processor.
Combine pecans, sugar, cinnamon and salt in a food processor.
Pecan crumbs in a food processor.
Pulse the mixture until the pecans are finely chopped.
Butter on crust.
Butter 1 side of each dough circle.
Pecan filling on buttered pie dough circle.
Layer pecan filling on top of 1 dough circle.
Stuffed crust with pecan filling.
Cover filling with second dough circle butter-side-down. Crimp edges with a fork.
Ready to bake tart.
Fit stuffed crust over peaches in pan Bake until crust is golden brown.

Ingredients
  

Bourbon Caramel Peach Filling

  • 2 to 3 fresh ripe peaches peeled, pitted, sliced
  • ½ tablespoon all-purpose flour
  • ½ cup lightly packed light brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup bourbon
  • ¼ teaspoon kosher salt
  • 1 tablespoon unsalted butter

Pecan Stuffed Crust

  • ½ cup pecan halves
  • 2 tablespoons sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • 2 Wick's Pies 8 to 9-inch dough circles thawed
  • 2 tablespoons softened unsalted butter

Instructions
 

  • Set oven rack to center. Heat oven to 400F. Spray a 9-inch cake pan with no-stick baking spray. Line the bottom with a parchment paper round.

Bourbon Caramel Peach Filling

  • Arrange peach slices in a slightly overlapping single layer over bottom of prepared pan. Dice some peach slices to fill the center. Dust with flour.
  • In a small saucepan, over medium heat, combine brown sugar, cinnamon bourbon and salt. Bring mixture to a rolling boil, reduce heat and simmer for 5 minutes or until slightly thickened.
  • Stir in butter until melted and mixture is smooth. Pour bourbon caramel evenly over peaches in pan.

Pecan-Stuffed Crust

  • Spread 1 side of each dough circle with the softened butter, leaving a ½-inch edge unbuttered.
  • In food processor, pulse pecans, sugar, cinnamon and salt until the pecans are finely chopped.
  • Spread the pecan mixture, in an even layer, over the buttered area of 1 dough circle.
  • Cover with the other dough circle, butter-side-down. Gently press the crusts together. Crimp the edges to seal. Using the tines of a fork dock the top crust in a few places to allow steam to escape.
  • Place stuffed crust over peaches.
  • Bake for 20 minutes or until crust is golden brown. Reduce oven temperature to 375F. and continue baking for 15 minutes or until crust is nicely browned and filling is bubbly.
  • Let rest on a cooling rack for 10 minutes before inverting on to a serving plate. Remove parchment paper.
  • Serve warm with ice cream.

I highly recommend sifting the flour over the peaches for a fine dusting.
