Pineapple Relish Topping

I published this recipe for Jezebel sauce some time ago. While similar, this updated version of a pineapple relish topping has some subtle differences. I replaced a product that may be difficult to find with honey mustard and a touch of fresh lime juice to brighten it up. I love this fresh relish on grilled burgers and pork sliders.

Before we get to the pineapple relish, let's just take a moment to reflect on our country's real heroes. God bless America, our first responders, our veterans and their families.

Let's continue on this path of Two Roads and A Recipe. This week we are making a pineapple salsa that is more like a relish as it contains mustard. It is a little spicy, a little sweet and so fresh tasting.

You may have heard of the old southern Jezebel sauce typically served over cream cheese and crackers. It is a combination of pineapple preserves, apple jelly, dry mustard and horseradish; a favorite at church suppers and Jr. League cookbooks. I like to say if Jezebel sauce and pineapple salsa had a baby this recipe is it.

Pineapple Relish Ingredients

  • fresh diced pineapple
  • honey mustard
  • fresh lime juice
  • scallions
  • jalapeños
  • fresh herbs, mint and cilantro

This chunky pineapple sauce is perfect served with grilled pork tenderloin marinated overnight in either an Asian or Mexican infusion. Or, if you want to travel a different road and just hungry for a snack….go ahead and dig in with your favorite chips. I also love it on a burgers and tacos for some sweet and spicy flair.

Ingredients
  

  • 1 cup small dice fresh pineapple
  • 1 tablespoon honey mustard
  • 1 teaspoon fresh lime juice
  • 2 scallions, chopped
  • 1 to 3 teaspoons seeded, minced red serrano or jalapeno pepper*
  • 4 fresh mint leaves, chopped
  • 1 tablespoon chopped fresh cilantro

Instructions
 

  • In small bowl, combine pineapple and mustard stirring to coat pineapple with the mustard. Add remaining ingredients and stir to combine.

*for those who don't like heat use red bell pepper
