Calamansi vinaigrette is a vibrant, citrusy salad dressing perfect for tossing with fresh greens or into a warm grain salad.

A couple of years ago my neighbor shared his calamansi fruit with me. I loved it so much I went out and bought my own tree. The calamansi plant is surprisingly easy to grow. It sat on my deck all summer filled with fragrant flowers. Now, it sits in a sunny window and is bearing lots of fruit.
While I love this calamansi curd I thought I'd try a new recipe with this beautiful fragrant fruit. Honestly, the calamansi juice makes the perfect vinaigrette salad dressing. It is the simplest recipe you will ever prepare.
Calamansi Vinaigrette Ingredients

- Agave nectar, honey or maple syrup all blend well.
- Good quality olive oil is a must.
- For a garlicky kick add 1 tablespoon roasted garlic oil, but this is optional.
- Kosher salt is a must to heighten all the flavors.
- No calamansi? Use a mix of lime and orange or try mandarins.


Calamansi Vinaigrette
Equipment
- 1 whisk
Ingredients
- ¼ cup fresh calamansi juice
- ¼ cup extra virgin olive oil
- 1 tablespoon roasted garlic olive oil
- 3 teaspoons agave nectar or honey
- ½ teaspoon kosher salt
Instructions
- Whisk all the ingredients together.
- Toss dressing with your favorite salad.
