Calamansi plant.

Calamansi vinaigrette is a vibrant, citrusy salad dressing perfect for tossing with fresh greens or into a warm grain salad.

Farro salad with arugula and squash.

A couple of years ago my neighbor shared his calamansi fruit with me. I loved it so much I went out and bought my own tree. The calamansi plant is surprisingly easy to grow. It sat on my deck all summer filled with fragrant flowers. Now, it sits in a sunny window and is bearing lots of fruit.

While I love this calamansi curd I thought I'd try a new recipe with this beautiful fragrant fruit. Honestly, the calamansi juice makes the perfect vinaigrette salad dressing. It is the simplest recipe you will ever prepare.

Calamansi Vinaigrette Ingredients

Vinaigrette ingredients.
  • Agave nectar, honey or maple syrup all blend well.
  • Good quality olive oil is a must.
  • For a garlicky kick add 1 tablespoon roasted garlic oil, but this is optional.
  • Kosher salt is a must to heighten all the flavors.
  • No calamansi? Use a mix of lime and orange or try mandarins.

  • 1 tablespoon roasted garlic olive oil
  • 3 teaspoons agave nectar or honey
  • ½ teaspoon kosher salt

Instructions

  • Whisk all the ingredients together.

BTW: the farro salad is simply cooked farro (1 cup uncooked in salted boiling water for 20 minutes or until tender), handful of baby arugula and a cup of diced cooked butternut squash. Add the calamansi vinaigrette while the farro is still warm.

This Christmas send someone you love a calamansi tree. It's so much better than a new tie or sweater and perfect for the one who already has everything.

Highly recommend growing your own calamansi shrub. The fresh fruit can be used not only in this deliciously bright dressing but also in marinades and desserts.
