Crispy ranch fried rice is a flavorful side dish using leftover rice. Not only does it serve a hungry crowd, but it’s ready in 30 minutes. Baking sheet-pan style makes it quick and easy. Bonus!

Let’s talk about the seasoning. I used the original dry seasoning from Hidden Valley Ranch. I tried experimenting with it some time ago when they hosted a recipe contest. Another recipe of mine made the finals of that contest, but it was this fried rice that my family most enjoyed eating. Mixed with low sodium soy sauce and sesame oil the ranch seasoning adds a ton of flavor to that Chinese take-out vibe.

The addition of fresh vegetables like broccoli and carrots adds sweetness as the veggies roast and caramelize in the hot oven. Feel free to customize the recipe with your favorite add ins. You can even transform this recipe into dinner with some extra protein on top like chicken or shrimp.

  • diced ham
  • green peas
  • sliced almonds

By the way, you can make your own dry ranch seasoning. It’s a mix of several dry herbs and spices plus buttermilk powder. Just google it as there are many variations of how to throw it together. I have not made my own, but there is a version from the Pioneer Woman that sounds really good.

Crispy Ranch Fried Rice Sheet-Pan Style

Description

A quick and easy flavorful side dish


Ingredients

Scale

2 tablespoons dry ranch seasoning

2 tablespoons water

2 tablespoons low-sodium soy sauce

2 tablespoons vegetable oil

2 teaspoons toasted sesame oil

3 cups chilled cooked rice

1 cup shredded carrots

1 cup broccoli florets

1 egg, beaten

2 scallions, thinly sliced

1 teaspoon toasted sesame seeds

 

 

 

 

 


Instructions

1.     In a large bowl, whisk seasoning, water, soy sauce, vegetable oil and sesame oil. Add rice, carrots and broccoli stirring well to evenly coat with Ranch mixture.

2.     Heat oven to 450F. Spread rice mixture evenly over a large baking sheet lined with parchment paper and bake on center rack for 15 minutes or until rice begins to brown.

3.     Remove pan from oven and gently stir rice mixture around. Drizzle evenly with the egg and return to oven to bake for 5 minutes or until egg is cooked through.

4.     Spoon onto a serving platter and sprinkle with scallions and sesame seeds.

Top with diced cooked ham, chicken or seafood for a quick and easy dinner
