Who can resist a freshly baked strawberry rhubarb galette featuring a flaky crust, sweet strawberries, tart rhubarb, and a generous swirl of whipped cream or crème fraiche on top? Not me! Plus, we are making it super easy by using a ready made pie crust. No dough struggle here unless you prefer a strawberry rhubarb lattice pie.

What is a galette?

  • Galette is the French word for "flat cake".
  • In baking, a galette is a rustic single-crust tart. It can be sweet or savory.

Strawberry rhubarb galette ingredients

  • Garden fresh strawberries and rhubarb are the fruits of late spring and early summer. This recipe takes full advantage of fruit at its peak flavor.
  • Light brown sugar adds caramel notes that balance the sweetness.
  • Orange zest is a stellar pairing with rhubarb and strawberries. The flavor combination is like a marriage made in heaven.
  • Cornstarch is used for thickening the fruit juices.
  • Ready made pie dough makes it easy.
  • Demerara sugar or sugar in the raw adds sparkle and crunch to the crust.
  • Egg wash helps the crust edge hold together when pleating, helps the sugar stick and adds a lovely golden color to the crust edge when baking.

How to make this strawberry and rhubarb galette

  • First, lay your cold pie dough out on a piece of parchment paper on a baking sheet.
  • Then, in a bowl, toss your fruit and zest.
  • Next, mix the brown sugar and cornstarch until blended and toss it with the fruit.
  • Mound the fruit mixture in the center of the crust and brush the crust edge with the lightly beaten egg wash.

Mix cornstarch and brown sugar together for even distribution.

Make the filling.

  • Finally, lift and pleat the crust edge encasing the filling.
  • Brush the dough with egg wash.
  • For a beautiful finish, sprinkle the demerara sugar over all.
  • Bake at 400F. for about 40 minutes

What to serve with a slice of sweet galette

  • Sweetened whipped cream is always a good choice.
  • Crème fraiche is my favorite. I love the rich silky texture and natural sweetness. Plus, no whipping required.
  • Vanilla ice cream on a slightly warm galette is dreamy.

This rhubarb and strawberry galette transcends the often hard work of baking. It's easy and comforting...almost like a meditation and even healing. While stemming the strawberries (pro tip in the recipe card video) I could not help but think of this quote from Albert Schweitzer...

Equipment

  • 1 baking sheet
  • 1 parchment paper

Ingredients
  

  • 1 (9 to 10-inch) ready-made pie dough round
  • 12 ounces fresh strawberries stems removed, sliced in half
  • 6 ounces fresh rhubarb diced
  • 1 heaping teaspoon grated orange zest
  • ¼ cup packed light brown sugar
  • 1 ½ tablespoons cornstarch
  • 1 egg lightly beaten
  • ½ tablespoon demerara sugar

Instructions
 

  • Heat oven to 400F.
  • Place pastry dough on parchment paper on a rimmed baking sheet.
  • In a large bowl, toss strawberries, rhubarb and zest.
  • In a small bowl, mix brown sugar and cornstarch until well blended. Sprinkle over fruit and toss to coat.
  • Mound fruit over center of pastry leaving a 1 ½ to 2-inch border.
  • Brush edge of pastry with egg wash. Lift pastry edge and pleat and pinch all the way around forming the crust edge encasing the filling.
  • Brush the crust with egg wash and sprinkle with sugar. Sprinkle some sugar over the fruit, too.
  • Bake for 40 minutes or until the fruit is bubbling and the crust is golden brown.
  • Serve slightly warm or at room temperature.

Notes

Serving suggestions: Top with crème fraiche, sweetened whipped cream or vanilla ice cream.
Depending how juicy your fruit is the filling may bubble out and over the crust. Use a rimmed baking sheet, if available or line your baking sheet with foil forming a rim. Place the parchment on top of the foil.
