Pumpkin Pecan Waffles

It has been a great week filled with happy news. Cait & Sam closed on their new house! At first, I did not see "the vision" of what this neglected structure could be, but after getting down and dirty ripping up old carpet to discover oak floors and cleaning the fireplace soot from old Pennsylvania stone the charm of the "good bones" has won me over.

Family dinner.

Cait & Sam will restore this home to its former beauty. Better, yet, together, they will fill this house with love, family gatherings and special memories. Isn't that what investing in a house is all about? Add a garden and life is good.

You've probably figured out by now: house renovations have exhausted me. I'm too tired to talk about grief. Discussing that subject intelligently requires brain power I simply don't have right now.

Actually, this total distraction of hard labor reminded me of something: helping someone else achieve a goal is a fantastic feel-good exercise. We should all do it more often.

If grief is currently getting the best of you, try this:

  • Help a neighbor.
  • Call a friend or family member and offer a hand.

Now let's make the most delicious Belgian pumpkin pecan waffles. The toasted nuts makes these really special. Drench them in real maple syrup.

These waffles will remind you of freshly baked pumpkin muffins and are delicious served with warm maple syrup and butter.

Equipment

  • 1 waffle maker

Ingredients
  

  • 1 ½ cups all-purpose flour
  • ¼ cup finely chopped toasted pecans
  • 1 tablespoon cornstarch
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 2 teaspoons pumpkin spice
  • ¾ cup pumpkin puree
  • 2 eggs separated
  • 1 cup milk
  • ¼ cup real maple syrup
  • 3 tablespoons unsalted butter melted
  • 1 teaspoon vanilla
  • 3 egg whites

Instructions
 

  • Preheat your waffle iron according to manufacturer's instructions.
  • In large bowl, whisk, flour, nuts, cornstarch, baking powder, salt and spice until blended.
  • In another bowl, combine pumpkin, egg yolks, milk, maple syrup, butter and vanilla; whisk until smooth.
  • Add wet ingredients to dry and whisk until well blended.
  • In a clean bowl, whisk 5 egg whites until stiff peaks form. Gently fold egg whites into the pumpkin batter.
  • Bake waffles.

Notes

If you don't have pumpkin spice you can make your own by mixing 1 ¼ teaspoon cinnamon, ½ teaspoon ground ginger and ¼ teaspoon nutmeg.

      It is being lovingly transformed. One of Will's Navy buddies lives nearby and has started a painting business. We are so proud to have him be a part of our family and help Caitlin and Sam with the renovations. Hope you like the waffles.
