Looking for a unique and fabulous brunch recipe? Then you have come to the right place. This savory corn tortilla casserole takes all the things you love about a flavorful morning meal and packs it into one mouthwatering dish. I'm talking about a cheese-filled brunch casserole baked to perfection with bacon, eggs, fresh corn tortillas andโ€ฆย chile con quesoย to put it completely over the top delicious.

Desert Pepper generously provided each of 38 contestants with 2 jars of each of their three flavors. This is my entry in the brunch category.

Ingredients for corn tortilla casserole.

This corn tortilla casserole just might remind you of a bread pudding. Replacing the typical heavy bread with lighter and fresh corn tortillas is what makes it so undeniably different. Plus the corn flavor blends so well with the creamy Desert Pepper Chile Con Queso. The queso adds such a wonderful kick, too.

And here is a tip: this corn tortilla casserole makes a great side to Mexican Eggs in Purgatory.

Corn Tortilla Casserole Ingredients

  • chopped corn tortillas are a unique replacement for bread in this casserole
  • pantry staples include eggs, butter, milk
  • bacon (any bacon you like is fine)
  • shredded cheese (any good melting cheese works)
  • fresh green onions and herbs
  • Desert Pepper Chile Con Queso (so creamy and flavorful)

How to make a Brunch Bake Casserole

Mix eggs, milk, queso, green onions, cilantro and cheese.
Chopped corn tortillas.
Toss chopped corn tortillas with butter.
Mix of ingredients.
Add tortillas to queso mixture.
Brunch bake ready to go into the oven.
Pour into a baking dish. Top with cheese and bacon

There is no substitute for this creamy deliciousness.

Bake at 375F. for 40 to 50 minutes or until golden brown and set.

The beauty of this bacon, egg and queso brunch bake recipe is that it can also be prepared in buttered 1-cup ramekins. And if you are not a morning person you can just put it all together the night before, refrigerate and bake it in the oven an hour prior to your brunch. So are you ready to give it a try?

Ingredients
  

  • 4 eggs
  • 1 cup milk
  • 1 cup Desert Pepper Chile Con Queso
  • 1 cup shredded Mexican cheese blend
  • 2 green onions thinly sliced, reserve green tops for garnish
  • 1 tablespoon chopped fresh cilantro plus additional for garnish
  • 4 corn tortillas, finely chopped 5 to 6-inch
  • 2 tablespoons melted butter plus additional for greasing pan
  • 4 strips thick cut smoked bacon cooked and crumbled

Instructions
 

  • Heat oven to 375F. Lightly coat an 8-inch square baking dish with butter.
  • In a large mixing bowl, whisk eggs, milk, queso until blended. Stir in half of the shredded cheese, green onions and cilantro.
  • In another bowl, toss tortilla pieces with melted butter to coat. Add to the queso mixture.
  • Pour mixture into prepared baking dish. Sprinkle top evenly with remaining cheese and bacon.
  • Bake for 40 to 50 minutes or until golden brown, puffed and set.
  • Let cool for 10 minutes before cutting and serving. Garnish with green onion tops and fresh herbs.

Notes

Can also be baked in buttered 1-cup ramekins.
